Veerse Meer oyster


Zeeland’s Roem will soon release a unique oyster on the market from the Lake 'Veerse Meer'.

Traditionally oysters are growing in this lake. Cultivating oysters from the traditional way, soil culture, is not allowed. Therefore, since a year and a half, Roem van Yerseke is growing oysters in baskets hanging in the water column. Since a direct connection with the Oosterschelde is made, fresh seawater flows in and out the 'Veerse Meer'. Due to this connection, the quality of the water has much improved.

As the oysters are not found at the bottom, they grow faster with lower mortality rates and they do not need a net to be fished. Moreover, the cultivation process is unique because the elder oysters originate from the 'Veerse Meer' and have propagated in Roem van Yerseke’s hatchery. The baby oysters that arise in the baskets, are placed back in the lake and grow out to consumption oysters which makes it into a real 'Veerse Meer' oyster. The oyster is distinguished by its unique shape, its chestnut brown colour and its special, full taste.
